Crust
- 20 finely crushed golden Oreos (about 8 oz.), plus 3 finely chopped for garnish

- 4 tbsp unsalted butter, melted and cooled
Cream Cheese Layer
- 12 oz cream cheese, softened
- 3/4 cup (85 g) confectioners’ sugar, divided
- 1 1/2 tsp vanilla extract, divided
- 2 1/4 cups heavy cream, divided
- 5 tsp strawberry gelatin powder (such as strawberry Jell-O)
Garnish
- 2/3 cup fresh strawberries, hulled and finely chopped
Instructions
- Prepare the crust: In a large bowl, whisk together the finely crushed Oreos and kosher salt. Pour in the melted, cooled butter and stir until fully combined. Press this mixture firmly into the bottom of an 8″ x 8″ glass baking dish. Place the crust in the refrigerator to chill while you prepare the filling.
- Make the cream cheese mixture: In another large bowl, use a handheld mixer on medium-high speed to beat the softened cream cheese, 3/4 cup (85 g) confectioners’ sugar, and 1 teaspoon vanilla extract until smooth and creamy, about 1 to 2 minutes. Slowly add 1 1/2 cups of heavy cream and continue beating until the mixture is light and fluffy, 2 to 3 minutes more.
- Assemble the first cream layer: Spread half of the cream cheese mixture (approximately 380 g) evenly over the chilled Oreo crust. Smooth the top using a mini offset spatula or the back of a flat rubber spatula for an even layer.
- Add the strawberry gelatin layer: To the remaining cream cheese mixture, add the strawberry gelatin powder. Beat the mixture until it is well combined and uniformly colored, about 1 minute. Spread this gelatin-infused layer evenly on top of the cream cheese layer. Smooth the surface and refrigerate for at least 2 hours or up to 1 day until fully set and cold.
- Prepare the whipped cream topping: Just before serving, in a medium bowl, beat the remaining 3/4 cup heavy cream, 1 tablespoon confectioners’ sugar, and 1/2 teaspoon vanilla extract on medium-high speed until stiff peaks form, creating a light and fluffy whipped cream.
- Finish and garnish: Spread the whipped cream evenly over the set strawberry gelatin layer. Garnish the top with the finely chopped fresh strawberries and the reserved 3 finely chopped golden Oreos for a beautiful presentation and extra texture.
