Ingredients
Scale
Main Ingredients
- 8 ounces wide LoMein noodles, cooked and rinsed
- 1 tablespoon peanut oil (or vegetable oil if allergic)
- 1 pound ground pork
- ¼ cup sliced green onions (cooked with pork)
- 2 tablespoons sliced green onions (for garnish)
- 4 cups bagged coleslaw mix (shredded green cabbage, shredded red cabbage, shredded carrots)
Sauce Ingredients
- ½ cup low-sodium chicken broth
- 3 tablespoons Mirin sweet cooking rice wine
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- ½ teaspoon sriracha hot sauce (optional, adjust to taste)
Instructions
- Cook Noodles: Boil the LoMein noodles according to the package instructions. Drain and rinse with cold water to stop cooking, then set aside.
- Brown Pork and Onions: Heat peanut oil in a large 12-inch skillet over medium-high heat. Add the ground pork and ¼ cup sliced green onions. Cook for 5-6 minutes, stirring and breaking up the meat until the pork is fully browned and no pink remains.
- Prepare Sauce: In a small mixing bowl, whisk together the low-sodium chicken broth, Mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha. Set aside the sauce mixture.
- Combine Ingredients in Skillet: Add the cooked LoMein noodles, coleslaw mix, and prepared sauce to the skillet with the pork. Gently toss everything together using tongs to combine thoroughly.
- Simmer and Coat: Cook the mixture for 2-3 minutes, allowing the sauce to reduce slightly while coating all the noodles, pork, and vegetables evenly.
- Serve and Garnish: Transfer the potsticker noodle bowl to a large serving bowl. Garnish with the remaining 2 tablespoons of sliced green onions and serve immediately.
Notes
- Substitute ground chicken or turkey for a leaner protein option.
- Use vegetable oil if peanut allergy is a concern.
- Add extra sriracha or chili flakes for more heat if desired.
- For a vegetarian version, replace pork with firm tofu and use vegetable broth.
- The coleslaw mix adds crunch and nutrition but can be swapped with shredded bok choy or napa cabbage.
