  • 1/3 cup parsley, finely chopped
  • 3 tablespoons green onions, finely chopped
  • 1/2 teaspoon freshly ground black pepper
  • 5 ounces feta cheese, crumbled

Phyllo and Assembly

  • 20 sheets phyllo pastry, thawed
  • Melted unsalted butter, for brushing

Instructions

  1. Sauté aromatics: Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add diced onions and cook until softened, about 5 minutes. Stir in minced garlic, dried oregano, and dried dill, cooking for an additional 5 minutes until fragrant. Remove from heat and allow the mixture to cool.
  2. Mix filling: Once cooled, add the drained spinach, finely chopped parsley, green onions, freshly ground black pepper, and crumbled feta cheese into the skillet with the onion mixture. Mix thoroughly until all ingredients are well combined.
  3. Prepare phyllo: Preheat the oven to 375°F (190°C). Lay out the phyllo sheets on a clean surface and cut them into 3-inch wide strips. Keep the phyllo covered with a damp towel to prevent drying out.
  4. Fold triangles: Place a spoonful of the spinach and feta filling at one end of a phyllo strip. Fold the corner over to form a triangle, then continue folding the strip in a triangular flag-like manner until the entire strip is folded. Place the formed triangles onto a parchment-lined baking sheet and cover with a damp towel to keep them moist.
  5. Bake: Lightly brush each triangle with melted unsalted butter. Bake in the preheated oven for 22 minutes or until the triangles are golden brown and crispy. Remove from oven and allow to cool slightly before serving.
