Crunch Coating

  • 8 Golden Oreos
  • 1/2 cup crushed freeze-dried strawberries

Inner Strawberry Layer

  • 1/4 cup (or more) coconut flour, plus more as needed
  • 1/4 cup crushed freeze-dried strawberries
  • 3 tbsp whole milk plain Greek yogurt
  • 2 tbsp almond, cashew, or other nut butter
  • 2 tbsp heavy cream
  • 2 tbsp maple syrup

Outer White Layer

  • 1 cup (or more) whole milk plain Greek yogurt
  • 1/2 cup (or more) coconut flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup heavy cream

Instructions

  1. Prepare Crunch Coating: Place the 8 Golden Oreos in a large resealable plastic bag. Using a rolling pin, crush them into fine crumbs. Transfer the crumbs to a shallow dish and mix in 1/2 cup crushed freeze-dried strawberries until well combined. Cover the dish with plastic wrap to prevent the strawberry powder from clumping.
  2. Make Inner Strawberry Layer: In a medium bowl, combine 1/4 cup coconut flour, 1/4 cup crushed freeze-dried strawberries, 3 tablespoons Greek yogurt, 2 tablespoons nut butter, 2 tablespoons heavy cream, and 2 tablespoons maple syrup. Mix thoroughly until a moist dough forms that holds together when pressed. Adjust moisture by adding 1 tablespoon heavy cream if too dry or 1 tablespoon coconut flour if too wet.
  3. Form Inner Dough Balls: Using a 1-teaspoon measuring spoon, portion the dough into small balls. Place them on a parchment-lined baking sheet and cover with plastic wrap to prevent drying.
  4. Prepare Outer White Layer Dough: In a separate medium bowl, mix 1 cup Greek yogurt, 1/2 cup coconut flour, 1/2 cup vanilla protein powder, and 1/4 cup heavy cream until smooth and moist enough to hold together when pressed. Adjust with 1 tablespoon yogurt if too dry or 1 tablespoon coconut flour if too wet.
  5. Form Outer Dough Portions: Using a 1-tablespoon measuring spoon, portion the white dough and place on another parchment-lined baking sheet.
  6. Assemble Protein Bites: Flatten one portion of the white dough in your palm. Place a ball of the red inner strawberry dough in the center, then carefully wrap the white dough around it and roll to seal completely. Roll each assembled protein bite in the prepared strawberry crunch coating until fully covered.
  7. Chill and Set: Arrange the coated protein bites on a clean parchment-lined baking sheet. Cover with plastic wrap and refrigerate until cold and firm, at least 1 hour before serving.
