  • Salt and pepper, to taste

Kale Chips

  • 4 cups kale leaves, torn and packed
  • 2 teaspoons olive oil
  • Salt, to taste

Topping

  • 1 cup reduced-fat cheddar cheese, grated

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the sweet potato and kale chips.
  2. Slice the Sweet Potato: Peel the sweet potato and use a mandoline to thinly slice it into about 1/8 inch thick pieces for even baking and crispiness.
  3. Oil and Season Sweet Potato Slices: Toss the sweet potato slices with 1/2 tablespoon olive oil to coat them evenly. Arrange them in a single layer on a large baking sheet. In a small bowl, combine garlic powder, cumin, smoked paprika, and chile powder. Sprinkle half the spice mixture over the slices, then season with salt and pepper to taste.
  4. Bake Sweet Potato Slices: Bake the slices for 10 minutes, then flip them over and bake an additional 10-13 minutes until the edges curl up and become crisp and golden brown. Remove from the oven and set aside to cool; the slices will crisp further as they cool.
  5. Prepare the Kale: While the potatoes bake, toss torn kale leaves with 2 teaspoons of olive oil and salt to taste. Spread the kale in a single layer on another baking sheet.
  6. Bake Kale Chips: Place the kale in the oven after removing the sweet potatoes, baking for 5-7 minutes until the kale turns crispy and golden. Remove and let cool slightly.
  7. Assemble the Nachos: In a large oven-proof skillet or baking pan, layer half the sweet potato chips in a single layer. Top with half the kale chips and sprinkle half the grated cheddar cheese over the top. Repeat with a second layer of potato chips, kale, and cheese.
  8. Melt the Cheese: Place the assembled nachos back into the oven and bake just until the cheese melts, about 3-5 minutes.
  9. Serve: Remove the nachos from the oven and serve immediately while warm and melty for the best taste and texture.
