Salad

  • 4 cups loosely packed arugula
  • 1/2 cup coarsely chopped fresh dill
  • 1 tsp. fresh lemon juice
  • 1 tsp. extra-virgin olive oil (from the 3 tsp. total)

Wrap Components

  • 4 store-bought or homemade lavash breads
  • 1/2 lb. sliced deli turkey, divided
  • 4 roasted red peppers, cut into thin strips (about 1 cup), divided
  • 4 Persian cucumbers (or 2 English cucumbers), cut lengthwise into quarters, divided

Instructions

  1. Prepare the cheese spread: In a medium bowl, combine the thinly sliced scallion, crumbled goat cheese, plain Greek yogurt, and 2 teaspoons of extra-virgin olive oil. Season the mixture with kosher salt and freshly ground black pepper to taste, then mix until smooth and well blended.
  2. Make the arugula salad: In a large bowl, gently toss the loosely packed arugula, coarsely chopped fresh dill, fresh lemon juice, and the remaining 1 teaspoon of extra-virgin olive oil. Combine until the leaves are well coated and lightly dressed.
  3. Assemble the wraps: Lay out each lavash flat on a clean work surface. Spread an even layer of the goat cheese mixture over each lavash, leaving a 1-inch border around the edges. Divide the sliced deli turkey, roasted red pepper strips, cucumber quarters, and arugula salad equally among the four wraps, placing the ingredients in the center of the lavash.
  4. Wrap and serve: Fold one half of each lavash over the filling like a burrito, then tightly roll to enclose all ingredients. Tuck the ends in to seal the wrap completely. Cut each wrap in half and serve immediately for best freshness and flavor.

  • To make this wrap vegetarian, omit the turkey and add your favorite grilled vegetables or legumes.
