Description

This Tuscan Chicken Wrap is a fresh and flavorful meal featuring tender rotisserie chicken, creamy mayonnaise blended with fresh herbs and sun-dried tomatoes, paired with baby spinach, cherry tomatoes, and fresh mozzarella rolled into soft flour wraps. Perfect for a quick lunch or light dinner, these wraps offer a delightful combination of creamy, tangy, and savory tastes with aromatic Italian herbs.

Ingredients

Scale

Mayonnaise Mixture

  • 6 tbsp. mayonnaise
  • 3 tbsp. chopped fresh basil
  • 2 tbsp. chopped sun-dried tomatoes
  • 2 tbsp. finely grated Parmesan cheese
  • 1 tbsp. chopped fresh oregano or 1 tsp. dried oregano
  • 1 scallion, sliced
  • 1 clove garlic, grated

Wrap Fillings

  • 4 (10″) flour wraps
  • 1 1/2 oz. packed baby spinach or arugula (about 1 1/2 cups), divided
  • 2 cups cooked chopped rotisserie chicken (about 8 oz.), divided
  • 4 oz. cherry tomatoes, quartered, divided
  • 4 oz. fresh mozzarella, sliced, divided

Instructions

  1. Prepare the Mayonnaise Mixture: In a small bowl, combine the mayonnaise, chopped fresh basil, chopped sun-dried tomatoes, finely grated Parmesan, oregano, sliced scallion, and grated garlic. Mix until all ingredients are incorporated evenly, creating a flavorful spread.
  2. Assemble Each Wrap: Lay one 10-inch flour wrap flat. Spread one-quarter of the mayonnaise mixture onto the wrap, leaving a 1-inch border around the edges. This helps prevent the filling from spilling out when rolled.
  3. Add Fillings: On top of the mayonnaise spread, add one-quarter of the baby spinach, half a cup of cooked chopped chicken, 1 ounce of quartered cherry tomatoes, and 1 ounce of sliced fresh mozzarella. Even distribution ensures each bite is balanced.
  4. Roll the Wrap: Fold in the sides of the wrap to keep the fillings inside. Then, tightly roll the wrap upward, away from you, keeping the sides tucked in, until it forms a secure burrito shape. This technique helps keep the wrap intact.
  5. Repeat the Assembly: Repeat steps 2 through 4 with the remaining wraps and ingredients, making sure each wrap has equal portions of spread and fillings.
  6. Serve: Slice each finished wrap in half diagonally for easier handling and an appealing presentation. Serve immediately or wrap them up for a lunch on the go.

Notes

  • For a healthier option, whole wheat or low-carb wraps can be used instead of flour wraps.
  • Sun-dried tomatoes can be soaked in hot water if too dry before chopping to enhance flavor integration.
  • Rotisserie chicken can be substituted with grilled chicken breast if preferred.
  • To make the wraps ahead, keep the spreads and fillings separate, then assemble just before serving to prevent sogginess.
  • Fresh herbs like basil and oregano are key to achieving authentic Tuscan flavors; dried herbs work but are less vibrant.
