  • Author: Mariam
  • Total Time: 55 minutes
  • Yield: About 4 cups 1x
  • Diet: Vegetarian

Description

This Vanilla Almond Granola recipe is a delightful, crunchy breakfast or snack option featuring whole rolled oats and slivered almonds, sweetened naturally with pure maple syrup and flavored with vanilla and almond extracts. Baked to golden perfection, it’s a wholesome, homemade granola that’s perfect for topping yogurt, smoothie bowls, or enjoying by the handful.

Ingredients

Scale

Dry Ingredients

  • 2 and 1/2 cups (213g) old-fashioned whole rolled oats
  • 3/4 cup (100g) slivered or sliced almonds
  • 1/2 teaspoon ground cinnamon
  • Pinch salt (about 1/8 teaspoon)

Wet Ingredients

  • 1/2 cup (120ml) pure maple syrup
  • 1/4 cup (56g) coconut oil, melted
  • 1/4 teaspoon almond extract
  • 1 Tablespoon pure vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 300°F (149°C) and prepare a large baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking and ensure easy cleanup.
  2. Mix the dry ingredients: In a large bowl, combine the rolled oats, slivered almonds, ground cinnamon, and salt. Toss them gently to distribute all the components evenly.
  3. Prepare the wet mixture: In a medium bowl, whisk together the pure maple syrup and melted coconut oil until fully combined. Then whisk in the almond extract and pure vanilla extract, ensuring the flavors meld well.
  4. Combine and coat: Pour the wet mixture over the oat and almond mixture. Toss thoroughly so every oat and almond piece is evenly moistened with the sweetened oil blend, which will help the granola clump and brown while baking.
  5. Bake the granola: Spread the coated mixture evenly onto the prepared baking sheet. Bake in the preheated oven for a total of 45 minutes, stirring the granola every 15 minutes to promote even toasting and prevent burning.
  6. Cool completely: Remove the granola from the oven and let it cool entirely on the baking sheet. As it cools, the granola crisps up into perfect crunchy clusters. Once cooled, store in an airtight container.

Notes

  • Use old-fashioned rolled oats for the best texture; instant oats will become mushy.
  • Feel free to substitute walnuts or pecans for almonds if preferred.
  • Stirring every 15 minutes during baking ensures even toasting and prevents burning.
  • Store your granola in an airtight container at room temperature for up to two weeks.
  • Use pure maple syrup instead of honey for a vegan-friendly granola.
